Recipe – Black Bean Walnut Turkey Tail Burgers

We are happy to share this recipe shared by Tammie Samuel to cook a Black Bean Walnut Burger recipe!

These patties can also be rolled into bean balls to go with your favourite pasta sauce on those meat-free Mondays. The oat flour gives these burgers a satisfying crunchy coating. I enjoy them on their own, drizzled with tahini and topped with organic salsa, and a dark leafy side salad, but you can enjoy these healthy burgers on whole wheat buns, and homemade air-fried potatoes too!

Black Bean Walnut Turkey Tail Burgers ingredients:

1 (19oz) can organic black beans, drained and rinsed

1/2 cup. cooked & packed brown wild rice

1/2 cup. shiitake mushrooms, chopped; stems removed (other mushrooms work fine too)

1 flax egg (which is 1 tbsp. flax meal + 3 tbsp. water, sit for 5 min)

1/4 cup. onion, diced

1/3 cup. raw unsalted walnuts crunched into smaller pieces (I just crunch them in my hands)

1-1/2 tbsp. olive oil

1/2 tbsp. soy sauce

2 tbsp. oat flour

2 tbsp. nutritional yeast

1 tsp. smoked paprika

1/2 tsp. black pepper

1 tsp. onion powder

1 tsp. garlic powder

1/2 tsp. sea salt

1/2 tsp. Turkey Tail Mushroom Powder from Organic Mushrooms Canada

In a large bowl, place the beans and mash lightly with a fork, just until you reach a coarse texture. Add the cooked rice, shiitake mushrooms, flax egg, onion, walnuts, olive oil, soy sauce, oat flour, nutritional yeast, spices, and turkey tail powder.

Form into patties (I find wetting my hands makes it easier to make the burgers, as it will be very sticky). Place burgers on a lightly olive oil-greased baking sheet and bake at 375 for about 20 minutes, or until you see that crispy coating. Flip once. Enjoy!

There is nothing better than a satisfying bowl of homemade chili.

Consuming even small amounts of these mushrooms has been shown to cause a reduction in inflammatory molecules in the bloodstream that block the signal to muscles and tissues. This can be of great help for people with arthritis, gout, migraines, inflammatory bowel conditions, and other irritation issues.

SHIITAKE-WALNUT- SWEET POTATO CHILI

Ingredients:

2 tbsp. olive oil

1 small onion

3 garlic cloves, diced

2 celery ribs, sliced

1/2 red pepper, chopped

1/2 green pepper. chopped

2 cups. shiitake mushrooms, washed, halved & stems removed

1 (19 oz.) can black beans, drained/rinsed

2 (19 oz.) cans of kidney beans, drained/rinsed

1 (156 ml) tomato paste

2 (540 ml) cans diced tomatoes

2/3 cup. can or frozen organic corn

1 cup. mashed sweet potato ( one large sweet potato)

1 cup. raw no salt, walnut pieces

1-1/2 cups. organic vegetable broth (more if you desire a thinner chili – or if you find your chili too thin, you can always add two tbsp. flax meal to thicken it up)

1/2 tsp. sea salt (or to taste)

4-5 tbsp. chili powder (or to taste)

1/2 tbsp. turmeric

1/8 tsp. black pepper

1/2 tsp. cumin, or to taste (I’m a baby when it comes to heat, so adjust to desired taste)

Preparation:

First, wash and scrub the sweet potato, DON’T PEEL keep that nutritious jacket on! Boil until soft. Mash up, set aside.

Now grab a big pot and sauté in olive oil for about 5 minutes on medium-low heat, the onion, garlic, celery, red pepper, green pepper and mushrooms. Then add the beans, tomato paste, diced tomatoes, corn, mashed sweet potato, walnuts and vegetable broth. Stir well to combine. Now add the spices. Stir again to mix well. Cover and simmer on low for about 3 hours. Taste test through the cooking stages to make any cumin or liquid consistency adjustments.

SERVE AS IS, or serve with the options below. *Adding a whole grain like quinoa, or rice makes this vegetarian dish a “complete” protein-packed meal.

You can modify the taste of this cup of hot chocolate as desired by adding more cinnamon for warmth, additional sweetener for sweetness and/ or more cacao for a richer chocolate taste.

To prepare Organic Mushrooms Hot coffee latte:

Just add the required quantity of coffee powder or a shot of espresso to the same ingredients used for Hot chocolate.

To make the coffee latte, blend the mushroom extract powder, coffee powder, maple syrup, cacao powder (for added flavor), ground cinnamon and sea salt with a bit of milk or hot water for around 30 seconds to 1 minute. Pour the blend into heating dairy-free milk and stir it till you see a froth forming. If you are using a shot of espresso, feel free to add the shot of espresso into the heating milk before adding the blended mixture.

Taste the coffee and adjust the flavor as desired by adding more cinnamon for warmth, additional sweetener for sweetness and/ or more coffee/espresso for a stronger coffee taste.

It is recommended to take 2-3 grams of mushroom extracts as a part of your daily diet. Less than half a teaspoon of Organic Mushrooms extract powder is equal to 1 gram of mushroom extracts and less than a full teaspoon of organic mushrooms equals 2 grams of mushroom extracts.
